This week I am making salmon tacos, chimichurri chicken and vegetables, falafel, and a couscous salad! I picked these recipes because I had a bunch of parsley and corn tortilla shells that needed to get used up. The corn tortillas will work great with salmon for tacos and the parsley is a key ingredient for both my chimichurri and falafel.
I already had frozen chicken breast and salmon filet at home- so I just needed to get fresh produce from the store!
I will also be making homemade flatbread for our falafel and banana bread for breakfast or a sweet treat!

August has been a crazy month! I officially graduated from my PhD program at UGA, am scheduled to sit for the RD exam, and have been keeping up with training for my first IRONMAN 70.3.
My fiancé and I decided to train for an IRONMAN 70.3 in April (before I knew when I would be defending my dissertation), and quickly found that May and June were not great months for training due to our schedules. Now that I have graduated, training has become much easier to fit into my schedule and we are working to get back on track for a race in the Spring. A fun fact is that my fiancé and I actually met in the triathlon club our freshman year of undergrad at Purdue. We have never done an IRONMAN 70.3, and this will be the longest race either of us have ever done!
Despite having a PhD in nutrition… I still find myself struggling to fuel for these long runs and bikes. You’d think I would have it down to a science (literally), but alas I still don’t eat enough and get dehydrated like everyone else. Hopefully we continue to improve our fueling skills as we continue practicing!
